President:

Brett Noy

Brett has been around baking all his life, his earliest childhood memories running around the family baking business in the central western Qld town of Barcaldine. After his apprenticeship he moved onto technical roles within companies such as Defiance, Allied, and Bunge flour mills. Brett went into business for himself in 1994 and has since then been heavily involved in many aspects of the baking industry.

He is a past winner of the Australian Artisan Baking Cup and a 3 time Australian representative and captain of the Australian Baking Team, twice placing in the top 3 at the Sigep International Bread Cup in Rimini Italy. Brett has strong beliefs in further education through the sharing of knowledge as the key to a strong trade future.

Vice President:

Will McPhail

Will started out in the baking industry at 14 years of age working as a baker’s assistant on the weekends. After finishing school he went on to study Applied Computer Science at USQ. He completed a baker/pastry apprenticeship and looked to further professional development in France and the USA.

He has worked in many positions in Australia from Baker to Manager. Will now owns his own small wholesale bakery that specialises in making the usual Australian breads using a combination of natural leaven, and sponge and dough systems.
