Emily Joins Australian Baking Team

The team have selected their reserve 3rd member for the IBA cup competition in Germany this year.

Emily Carnell is from Brisbane and has recently completed her apprenticeship under French baker Sebastian Pisasale at Chouquette Boulangerie.

Emily has great strengths in both bread and pastry and has past competition experience at the Artisan Baking Cup. Emily speaks fluent German which will be of great assistance to the team during the IBA Cup competition.

The team’s next practice session be in Brisbane on the weekend of the 26th and 27th of May, at the Bakels Test Kitchen.

Australian Baking Team Share Tips for a Top Loaf

The Australian Baking Team is training hard for the IBA cup in Germany later this year.  Baking Business caught up with them at the Van Rooy test kitchen in Melbourne last week to get the team’s advice on the best ways to mix, mould, prove and bake a world class loaf of bread.

 

Introducing your Australian Baking Team

After much deliberation it is with great pride that SCBG announces the candidates selected for the 2012 Iba Baking Cup in Munich. The team was selected based on a mix of experience, skill, and of course most importantly future development.

Congratulations to the newest members of the Australian Baking Team:

Shayne Greenman – Victoria
Stephane Gruson – Western Australia
Scott Megee – Victoria

The team will be coached by Brett Noy and Will McPhail, both were part of the Louis Lesaffre Cup team in 2011, Brett and Will bring a wealth of international competition and technical experience.

Over the coming weeks and months we will bring you updates and further information about your candidates as they progress through their training and preparation for this event. The Iba Baking Cup is a true international baking competition, held every 3 years as part of the worlds biggest bakery show, Iba.

The 2012 competition will be the toughest yet, with 14 of the best international teams from Europe, Asia Pacific, Africa, and the Middle East. We look forward to bringing you further updates as things progress.

Your Chance to Represent Australia!

Southern Cross Baking Group is now calling for nominations for the Australian Team to compete in next years Iba Cup.  The competition takes place as part of the Iba show in Munich in September 2012.

This is your opportunity to represent your country in this prestigious event. This experience, whilst challenging, will provide the successful candidates with experiences, skills, and knowledge that will stay with them for the rest of their life.

To apply for the Australian Baking Team you will need the following,

Applicants need to provide an extensive professional resume showing professional experience, any past competition experience, and photographic examples of your work.

Team members will be required to commit to an intensive training program, and be prepared to travel to attend training sessions in different facilities around the country. Most training sessions however will be conducted at our training facility in Brisbane.

You will need to provide evidence of strengths in one, or more of the following areas,

Preferment/Artisan Breads
Traditional leavened and unleavened laminated Pastries
Artwork in dough, and decorative dough techniques.

Applicants must also be prepared to participate in a bake off if required as part of our final selection process.

The Australian Baking Team will be managed and trained by Southern Cross Baking Group.

Australian Baking Team

The announcement has been made and we are sad to say that Australia wasn’t the final team selected for the 2012 Coupe du Monde del la Boulangerie. We were up against big budget teams who had been practicing intensively for a long period of time but it didn’t stop us from giving it a red hot go!

We will now begin on the road-map for classes in the coming year and on planning for a national identification and selection process for the next team who will compete in the next edition of the Louis Lesaffre Cup.

I wanted though to take the time to recognize and thank all those involved in the training, support and sponsorship of the Australian Baking Team.

To our families and friends and staff, thank you for your unconditional support, it has been a difficult process with much time away from loved ones, and businesses. The understanding, and flexibility you have all shown made it possible to achieve everything we did.

To our amazing sponsors, thank you for your support, trust, and faith, we appreciate you very much and assure you of our ongoing promotion, and development of our professional relationships. We will personally and through SCBG continue to put back into the baking community, all that has been learnt through this incredible experience.

To the organizers of the Louis Lesaffre Cup, you do an amazing job, your passion for the promotion of increased skills and knowledge through competition,  and the sharing of knowledge between bakers all over the world is to be admired and commended. Thank you from all of us here in Australian Baking!

Last but not least my Team mates, Will, Trevor and Rob, what an incredible group of guys you are, I am privileged to have had the opportunity to spend time with such amazingly talented human beings. This journey and experience I will carry with me for the rest of my life and it is the beginnings of many more to come I’m sure.

Team Australia are the Challenger Team for Asia!

Congratualtions to Team Australia at the Louis Lessafre Cup. The team trained hard and deserved the result achieved. Competing against 6 other countries they were recognised as the challenger team for the Asian round. We will find out in June if we are the 12th team to be heading for the World Cup.

The team comprises SCBG Members Brett Noy, Trevor Sims, and Rob Howard. The team coach is SCBG member Will McPhail.
